I began making these cookies when my daughter, now 18, was a baby because I wanted to include some foods from her Italian heritage into our tamale-laden festivities at Christmas time. They were such a success that I now have to make them every year or face the wrath of family and friends. |

You will love this receipe because it is so simple & fool proof even a child can make it! As I am a long-standing homemaker, I remember my mother making these "Casserole Cookies" in our Minnesota home. She taught me young to cook and I even won a Campfire Girls cake baking contest at age 10.
These cookies can be made a week or more before the holiday bustle and require few ingredients and only simple kitchenware. |

DATE BARS
First, make the crust:

Combine all and blend to fine crumbs. Pack into the bottom ... |
|
| Essay: |
My mother used to make these date bars for my father, every Christmas. They have been divorced for over 25 years, but our family's love affair with the date bars continues. Every year, when Christmas approaches, someone always asks my sister or me in a serious, earnest tone, "Are you going to make the date bars?" We don't know where the recipe came from--maybe it was on the Dromedary dates box at one time? They're incredible and scarily addictive. They're not very beautiful, although with the powdered sugar sprinkled on top they do have sort of a special holiday kind of look. A lot of people think they're not interested in them. They'll say, "I don't like dates" or "I'm into walnuts." Doesn't matter. If they try them, they love them.

This recipe is from my English-bred maternal Grandmother. The recipe card on which it is carefully handwritten dates back to the 1920's. She only made Trilbies once a year, during the Christmas Holidays, probably because they take a little time to put together, and dates were not always plentiful in the Winter in Wisconsin. I've found that they are best eaten 2-3 days after they are assembled, because the filling has time to totally merge with the wafers, having the texture of a fig newton, and the taste of a bit of Heaven. |

Caramel Frosted Brown Sugar Cookies with Pecans As soon as the crisp winter air fell upon us and the streets became lined with colored lights, my mother and I would warm ourselves and our loved ones by baking our Caramel Frosted Brown Sugar Cookies with Pecans. Rich butter and delicious brown sugar, these cookies were born out of the ingredients that always seemed available in our pantry. As a child, I remember standing on a chair so I could help mix the bowl before my mother set the dough on the cookie sheet and placed them in the oven. The sweet smell of fresh baked cookies filled our home and once they were done, the entire family would gather around the warm treats. They were so light and fluffy, I remember thinking I was eating tiny clouds that tasted of cake. Our Caramel Frosted Brown Sugar Cookies with Pecans provided a sense of comfort and home. Smiles all around and a feeling of togetherness sprung from this small good thing. We still make them every year, only now I don’t need to stand on a chair to reach the bowl.

"Los Angeles Times Food Cookie Bake-Off"
Greetings* My name is Rosemary Battaglia Gabledon.
I was so excited to read about the bake -off for favorite holiday cookie recipes. Thank you for giving us, your readership, the opportunity to submit our favorite recipes and also enjoy so many others. I love to bake all year round & especially for the holidays. Being Italilan means eating lots of bread & pasta which also means lots of carbs... To compensate I created a recipe & removed the flour. This recipe is so simple & a good cookie base for other great cookies. By adding in your favorite ingredients you too can create so many different cookies. Peanut butter or other nut butters can be used. Semi-sweet, white-chocolate chips, & or other flavored chips. Healthy; add dried fruits, raisins, cranberries, figs, etc. Oatmeal, wheatgerm, flax, sunflower seeds, orange, lemon, or lime zest. So many choices. My "Chocolate Almond Gala Cookies", are Simple, Elegant, & Simply Delicious... Thank You & Enjoy, Rosemary |

This will be the 36th of the last 37 years that my friend and I have baked cookies together. We've added a couple of new ones over the years and now make the same 7 recipes though we double some, so I make 12 batches to have enough for my friends and neighbors. This recipe is from the L.A.Times, maybe the West magazine when I was first married, between 1968 and 1970. It's the favorite of both of my children, hence the Valentine variation. They're also the favorite of several of my friends including one who contacted me by facebook after 35 years who also continues to makes them |
